Sourced from vineyards in Worcestershire and Essex, this 100% Pinot Noir was made using clones selected for their small berries to ensure maximum flavour concentration.
The grapes underwent a 5-day cold soak, followed by fermentation on skins for 10 days before being pressed and transferred to tank and barrel for ageing. 75% was aged in stainless steel to retain freshness and lift, while 25% matured in French oak barrels to bring delicate structure and subtle spice.
TASTING NOTES
Bright and lifted on the palate, with layers of red fruit and a gentle thread of spice. Light-bodied with soft tannins and a smooth, flowing finish. Refreshing and well-balanced, offering purity of fruit and a touch of savoury complexity.
